BRUSSEL SPROUTS

Best steamed and served still crunchy with roast meat.

But try sliced and added to stir fries for alternative green crunchiness.

Gratin of British Sprouts

INGREDIENTS

  • 1 clove of garlic
  • butter to grease dish
  • 450g (1lb) cooked sprouts
  • 150 - 300ml (5-10fl oz) double cream
  • salt, pepper
  • handful of stale breadcrumbs
  • 2tblsp grated cheese
METHOD
  • Preheat oven to 200C/gas mark 6.
  • Rub garlic clove into greased flat oven proof dish.
  • Bring cream to scalding point (just short of boiling point).
  • Place sprouts in dish and season.
  • Pour cream over sprouts and then sprinkle with breadcrumbs and then the cheese.
  • Grill for 20-25 minutes in the oven or until crusty and brown.
